What affects cost
Rock is the single biggest cost multiplier on almost any excavation job — breaking and removing it is slower than digging soil, and depending on volume it can require different equipment than what was originally planned for the job.

How do you know if you're going to hit rock before you start digging?
A pre-bid site walk that includes a few hand-augered or probe holes is the best way to flag rock risk before the job starts. Without that, it's often a mid-dig discovery.
What happens to the broken rock?
Depends on volume and your plans for the site — some rock can be repurposed as fill or drainage material on site, the rest gets hauled off.
Does hitting rock always mean a big cost increase?
Usually some increase, since it's slower work than soil — the size of the increase depends on how much rock and how deep.
